Sweet and Sour Jackfruit
270 gram Jack fruit flesh
80 gram Pineapple-chunky cut
40 gram Onion-chopped
2 clove Garlic-finely chopped
1 small Red chilli-chopped
1 Spring onion-finely sliced
2 tablespoon Vegetable oil
1 tablespoon Soy sauce
1 tablespoon Sweet chili sauce
2 teaspoon Demerara sugar
1 teaspoon Yeast extract
1 teaspoon Yeast flake (optional)
1 pinch Black pepper
-Put the vegetable oil and gently fry the onion and garlic in the frying pan for approx 2 minutes.
-Add the Jackfruit, soy sauce, sweet chili sauce, Dermorarar sugar and stir fry until the sauce caramelized (approx 10 minutes).
-Add the pineapple, yeast extract, and cook for further 5 minutes.
-In goes the spring onion and yeast flake. Fold all the ingredients together and serve immediately with flatbread, crunchy vegetables, or even crispy taco shells.
– Keep an eye on the pan at all times while cooking this dish as it can easily get burnt.
-I used the jackfruit from the can, less hassle, and quick to cook.
-You can also serve with brown rice, burger buns, and vegetable of your choice too.
