-Preheat the oven at 200 Celsius.
-Mix the potato, salmon, spring onion, mayonnaise, salt, pepper, chili, and lemon juice in a large mixing bowl.
-Roll the mixture into the ball then gently flatten to shape.
-Cover the fish cake with the flour, dip into the beaten egg. Lastly the breadcrumbs.
-Heat the oil in frying pan. Gently fry the fish cake until the crumbs turn golden brown.
-Bake for 10-15 minutes and serve a lovely fresh salad or dip in sweet chili sauce.

-You can use other types of fish ie. tuna, mackerel, smoked haddock too.
-Wash and clean the potato well. No need to peel the skin as it is packed full of nutrition.
