Thai Meatball Curry
400 gram Fresh meatball
300ml Thai coconut milk
2tbs Red curry paste
1tbs Rapeseed oil
1/2tbs Fish sauce
1/2tbs Oyster sauce
1/2tsp Lemon juice
1 pinch Salt
6 leaf Coriander –finely chopped
-Put the oil and meatballs into the frying pan. Then fry until the meatballs caramelised and semi-cooked. Then drain the excess oil off.
-Add Thai coconut milk, gently stir and bring it to boil.
-Turn the heat down and put sugar, fish sauce and oyster sauce. Stir and simmer for approx. 15 -18 minutes. Keep stirring every 4 minutes
-Add the lemon juice then gently stir. Garnish with coriander and serve Thai Meatball Curry immediately.
-Thai Meatball Curry is lovely with Thai Jasmine Rice.
-Feel free to add some vegetables in this curry. Not only it is more nutritious but also add lovely colours to the dish.
