Coconut Ice Lollies
400ml Coconut water
60 gram Coconut flesh-grated
1 small pinch Salt
75 gram Dark chocolate (optional)
-Put the coconut water and sugar into the saucepan. Gently heat until the sugar dissolve. Do not boil. Put a tiny pinch of salt and gently stir, then remove from the heat immediately. Leave it to cool.
-Separate the grated coconut flesh into the 4-5 ice lolly moulds.
-Pour the coconut water into the ice lolly moulds. (Mine hold 100 ml.per each lolly). Place the lid back on and put the moulds in the freezer overnight.
-Put the dark chocolate in the microwavable jug or bowl. Heat in full power for 20 seconds, take it out and stir. Then keep repeat this process until the chocolate turns liquidise.
-When ready to serve, run the warm water on the ice lolly moulds. Remove and enjoy these refreshing Coconut Ice Lollies on its own or drizzle with the dark chocolate melted.
-Coconut Ice Lollies is tasted even better with the young coconut flesh. So if you can get a hold of one. Make sure you use it.
-Keep the very close eyes while heating the coconut water as you do not want to boil them as same the chocolate.
