Cantaloupe in Coconut Milk (Vegan)
-Put 60 ml of Thai coconut milk and coconut palm sugar in a small saucepan on the medium heat. Keep stirring until the sugar dissolved. Remove it from the heat.
-Pour the rest of Thai coconut milk in another small saucepan bring it to boil. Add a pinch of salt. Remove it from the heat.
-Assemble the chilled cantaloupe chunks and sweet coconut milk in the serving bowl. Drizzle with the salty coconut milk on top and serve immediately.
-Hot and cold, sweet and salty are the combination of this quick and easy Thai Vegan dessert. I like to keep the cantaloupe in the fridge until last minute before serve.
